Palo Cortado is a type of sherry that is still not fully understood, as it comes about when the wine initially ages under flor yeast, but then the veil of yeast spontaneously dies and the sherry continues to age oxidatively. The Regente from Sanchez Romate is a sherry of true quality, allowed to take all the time in needs in solera. The average age of this Palo Cortado is between 15 and 20 years. It has aromas of dried fruits and nuts, orange peel, a slight salinity. In the mouth it is dry and rich, with notes of citrus, roasted coffee, bitter cocoa and hazelnut.
