GABRIELA ORO EN RAMA MANZANILLA Berrero 750ml NV, a Manzanilla that is a level above the usual, deep in colour, nutty, salty and deep, with hints of white olive and stone fruits. This exceptional Manzanilla comes from the Palomino Fino vineyard of Las Cañas, in Pago Balbaína with the classic Albariza soils. En Rama is what sherry purists get excited about and in terms of natural production, it is about as close as sherry gets. Although the fruit for this wine is not certified organic, intervention in these very dry, hot vines in Andalucia is very low. The wine is fermenetd with native yeasts initially. It is then aged under flor and bottled En Rama. A bit about what En Rama actually means. It is essentially un-filtered sherry, and very different as most sherries are heavily filtered. However, En Rama wines still undego a very ‘light’ filtration. But they find a much better balance between retaining the essential flavour and colour molecules and only taking away the biggest, solid particles. A truly ‘Raw’ Sherry wine, bottled without any filtering whatsoever, could turn brown and go bad after a mere two weeks. So you could say en rama is the best possible compromise between required stability and desired flavour intensity. The wine can still be slightly cloudy but in a way that captures essence of natural ageing. Gabriela Oro En Rama is simply delicious sherry and shows how good this overlooked wine can be. Despite the ABV, sherry is delightfully refreshing when served chilled and we highly recommend as an apero with some salty snacks and fish, but you do really need the sunshine aswell. Is Vegan?
