Harvested from the third selection of grapes from the 4 hectares of Chenin Blanc vines at the end of October, the slightly arid, low-altitude terroir is generally dry and well away from sources of humidity. This allows for a slightly later harvest and grapes that are slightly shriveled on the vine. The naturally overripe grape yield a high concentration of sugars while preserving the structure and acidity in the vine.
